Also, recent studies have shown that yield/grade, reflecting the leanness of meat, was a full grade better then that of Hereford or Angus cattle because of the greater levels of polyunsaturated fat in Texas Longhorn muscle tissue. Comparisons of the nutritional values of Texas Longhorn cattle have shown that the meat is low in fat, cholesterol and calories and high in protein and nutrients.
