When Mexico Lindo's owner Ester came in to work Tuesday morning to prep for the days meals she was stunned at the sight that lay before her. The restaurant she and her husband had worked so hard to build was flooded.
Parts of the ceiling had fallen in and the restaurant had flooded when during the night, with below freezing temperatures, pipes in the ceiling had ruptured.
According to the Servo-Pro technician on site there were three pipes that had broken and the restaurant had been 3/4 flooded. He pointed out that the building at the end of the strip mall on Copper Cove drive, previously housing Trinity Mortgage, had been "100% flooded." He also stated that the cold snap had affected five counties and many homes and businesses were damaged.
Ester is optimistic that they will re-open by Wednesday or Thursday next week (1-25 or 1-26). She was also thankful for all the customers that stopped by to extend their well wishes.
